A taco salad has many of the same characteristics as this black bean and quinoa bowl, but without the fried bowl. In addition to a simple hummus dressing to spread on top, we’ve topped it with pico de gallo, fresh cilantro, and avocado.


3/4 cup rinsed canned black beans

2/3 cups of cooked quinoa

1/4 cup of hummus

a teaspoon of lime juice

diced 1/4 of a medium avocado

One cup of pico de gallo

Two teaspoons of freshly chopped cilantro


In a bowl, mix quinoa and beans. In a small bowl, combine the hummus and lime juice; thin with water to the desired consistency. Over the quinoa and beans, drizzle the hummus dressing. Add cilantro, avocado, and pico de gallo to the top.
