Breakfast Naan Pizza

By assembling a quick individual pizza on a prepared naan, you may add some flavour to your breakfast eggs.


One whole-wheat naan

Two tablespoons part-skim ricotta cheese

One tablespoon low-sodium marinara or pesto

1/2 teaspoon lemon zest

One large egg

One tablespoon grated Parmesan cheese

For garnish, use freshly chopped basil and ground pepper.


Set the oven to 425 °F. On a baking sheet with a rim, mist cooking oil.

Naan should be put on the ready pan. In a small bowl, combine the ricotta, marinara (or pesto), and lemon zest. Making a well in the centre, spread the mixture over the naan. Crack the egg into the well with care. Add a sprinkle of Parmesan. Bake for 8 to 10 minutes, or until the cheese is melted and the naan is brown. If desired, add basil and pepper as a garnish.
