Cucumber, Tomato & Feta Salad with Balsamic

Fresh vegetables and flavor-enhancing elements like balsamic vinegar, Kalamata olives, and crumbled feta cheese are abundant in this tomato salad with a Greek flair. This quick and easy salad comes together in just 15 minutes, and while you may enjoy it right away, the longer it marinates, the better it tastes. Allow at least an hour before serving.


1/4 cup balsamic vinegar

Two tablespoons extra-virgin olive oil

1/4 teaspoon kosher salt

1/4 teaspoon ground pepper

Four cups grape tomatoes (1 pound 3 ounces), halved

1/2 cup thinly sliced white onion

1/3 cup chopped fresh basil or parsley

One and half cups halved and sliced cucumber

1/4 cup halved Kalamata olives

1/4 cup crumbled feta cheese


In a sizable bowl, combine the oil, salt, and pepper with the vinegar. Stir in the tomatoes, onion, and basil (or parsley). Stirring once or twice during the hour of refrigeration. Toss in the feta, cucumber, and olives to coat.
