Greek Tortellini Salad

For a quick side dish that’s ideal for potlucks, picnics, and other informal parties, fresh cheese tortellini is combined with traditional Greek salad components like tomatoes, cucumbers, and red onion.


300 gm refrigerated cheese tortellini (2 1/2 cups)

1/4 cup crumbled feta cheese

Three tablespoons extra-virgin olive oil

Two tablespoons red-wine vinegar

One tablespoon chopped fresh oregano

1/2 teaspoon ground pepper

1/4 teaspoon salt

One cup chopped tomatoes

One cup chopped cucumber

One cup sliced spinach

1/4 cup chopped red onion


Bring water in a big saucepan to a boil. For approximately four minutes, add the tortellini and simmer until just al dente. Drain.

In the meantime, combine the feta, oil, vinegar, oregano, pepper, and salt in a big bowl. Include cooked tortellini, tomatoes, cucumber, spinach, red onion, and so on. Coat by tossing.
