Leftover Turkey Stew

The greatest way we can think of to use up Thanksgiving leftovers is in this hearty dish for turkey stew. And we’re not just talking about the turkey; the leftover gravy is also incorporated to give the dish depth and substance.


Olive oil, one tablespoon

1 1/2 cups finely minced yellow onion

Four cups of chicken broth without salt

remaining two cups of gravy

Four cups of the remaining roasted veggies, diced up.

Three cups of cooked turkey shreds

two teaspoons of freshly cut flat-leaf parsley

1/4 teaspoon salt

1/4 teaspoon of pepper, ground


In a large, heavy saucepan, preheat the oil over medium-high heat. Add the onion and simmer, stirring periodically, for approximately six minutes. or until it starts to soften and become brown. Add the broth and gravy, and then stir the mixture occasionally as it boils. Remaining turkey and veggies are added; the mixture is cooked through after two to three minutes of intermittent stirring. Add parsley, salt, and pepper, and stir.
