Loaded Broccoli Salad

This broccoli salad will be the subject of special requests. It’s difficult to resist the flavour combination of bacon, sour cream, mayonnaise, scallions, and Cheddar.


Three slices bacon

1/4 cup sour cream

1/4 cup mayonnaise

Four teaspoons rice vinegar or cider vinegar

1/4 teaspoon ground pepper

Four cups chopped broccoli

1/2 cup sliced scallions

1/2 cup shredded extra-sharp Cheddar cheese


In a large skillet, cook the bacon for 5 to 7 minutes, or until it is crisp. Transfer to a plate that has been covered in paper towels. Save one tablespoon of the bacon fat. When the bacon is safe to handle, chop it.

In a sizable bowl, combine the sour cream, mayonnaise, vinegar, pepper, and the saved bacon fat. Add the cheese, bacon, scallions, and broccoli. Toss to incorporate the dressing.
