Pasta Salad with Black Beans & Avocado

This dish for pasta salad, which is loaded with tomatoes, corn and black beans, will be a hit with everyone. For a healthy take on a picnic favourite, we add avocado to the creamy dressing to lighten it up.


1/2 ripe avocado

1/4 cup mayonnaise

Two tablespoons lime juice

One small clove garlic, grated

1/2 teaspoon salt14ΒΌ teaspoon cumin

Pasta Salad
Eight ounces whole-wheat fusilli (about 3 cups)

One cup halved grape or cherry tomatoes

1/2 cup canned black beans, rinsed

1/2 cup corn, fresh or frozen (thawed)

1/2 cup shredded Cheddar cheese

1/4 cup diced red onion

1/4 cup chopped fresh cilantro


Avocado, mayonnaise, lime juice, garlic, salt, cumin, and avocado are combined in a small food processor to make the dressing. until smooth, puree.

To make pasta salad, cook the pasta as directed on the box in a big pot of boiling water. Drain once more after rinsing with cold water. Place in a large bowl. Tomatoes, beans, corn, Cheddar, onion and cilantro are stirred in. Dressing added, toss to coat.
