Peanut Butter-Oat Energy Balls

Dates that are delicious and sticky hold these no-bake energy balls together. This wholesome snack travels easily and is ideal for hiking or sports. Use Medjool dates, the biggest and most luscious date variety, for the finest flavour and texture. Find them with other dried fruits or in the produce section.


1 cup rolled oats
1/2 cup natural peanut butter “creamy or crunchy”
1/4 cup honey or maple syrup (adjust to taste)
1/4 cup ground flaxseed
1/4 cup mini chocolate chips or dried fruit (optional)
1 teaspoon vanilla extract
Pinch of salt


Dates should be soaked for five to ten minutes in a small dish of boiling water. Drain.
Process the soaking dates, oats, and peanut butter until very finely ground in a food processor. Form into 12 balls, each about a tablespoon in size. If desired, add chia seeds as a garnish. Place in the fridge for at least 15 minutes and as long as a week.
