Roasted sweet potatoes are a delightful and healthy side dish that adds a burst of flavor to any meal. With their natural sweetness and tender texture, they are a

2 large sweet potatoes
2 tablespoons olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme (optional)
Salt and pepper to taste
Fresh parsley (for garnish, optional)


Set oven to 425 degrees Fahrenheit. Cooking spray lightly coats a large baking sheet with a rim and is lined with foil. Place aside. Sweet potatoes should be chopped

into 1-inch chunks.

In a large bowl, combine oil, kosher salt, and pepper with the sweet potatoes. Sweet potatoes should be spread out on the baking pan in one layer.

Roast for 20 minutes, turning once, until soft within and nicely browned and crispy on cut sides.
