Simple Cabbage Salad

This recipe for cabbage salad, the cabbage keeps a wonderful crisp when it is mixed with a basic dressing.
For this salad, the most popular type of cabbage is green cabbage. Green cabbage is a low-cost, adaptable cruciferous vegetable. Green cabbage has smooth, tightly-packed leaves that are round and compact, with a mild flavour. For a variety of hues and textures, feel free to add different varieties of cabbage to the salad, such as red, napa, or savoy.


Two tablespoons lemon juice

Two tablespoons extra-virgin olive oil

Two tablespoons chopped fresh flat-leaf parsley

One tablespoon Dijon mustard

One tablespoon honey

One teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon ground pepper

Eight cups shredded green cabbage


In a large bowl, combine the lemon juice, oil, parsley, mustard, honey, garlic powder, salt, and pepper. Toss in the cabbage and let it stand for 10 minutes after adding. Remix, then either serve right away or chill for up to one hour.
