Spinach Omelet

For a filling breakfast, try this quick and easy recipe for a tasty spinach omelette. Fresh dill enhances the flavour while adding fresh protein, which is added by eggs and cheese.


Two large eggs

One teaspoon extra-virgin olive oil

One cup spinach

Two tablespoons shredded Cheddar cheese

One teaspoon chopped fresh dill


Eggs are whisked in a small bowl. In a small nonstick skillet, heat the oil over medium-high heat while tilting the pan to evenly coat it. Pour the eggs in and mix quickly for 5 to 10 seconds using a rubber spatula. Then, tilt the pan to let the uncooked egg fill in the edges as you push the cooked bits at the edge into the centre. Cook for a another minute or so, or just until the bottom is golden and almost set.

Remove from heat and top with spinach and Cheddar on half of the omelette. Overlap the remaining half with the filling. Place the omelette on a platter and garnish with dill.
