Japanese Cucumber Salad

Japanese cucumber salad known as sunomono is a simple dish that gives the ideal harmony of acidic and sweet flavours.

2 medium-sized cucumbers
1/2 teaspoon salt
1/4 cup rice vinegar
2 tablespoons sugar
1/2 teaspoon soy sauce (optional)
1 tablespoon sesame seeds, toasted
Thinly sliced fresh ginger (optional, for garnish)


Cucumbers may be peeled to reveal alternating green stripes. Cut the cucumbers in half lengthwise, then use a spoon to remove the seeds. Slice extremely thinly using a sharp knife or a broad veggie peeler. Put two layers of paper towels in place and compress them lightly to absorb any extra moisture.
