Super-Seed Snack Bars

These nutritious snack bars are brimming with protein, fiber, minerals, and good fats thanks to a combination of pumpkin, sunflower, hemp, and chia seeds. These bars travel nicely, making them ideal for bringing along on daylong excursions.


1/3 cup tahini

1/3 cup honey

One teaspoon of vanilla extract

1/4 teaspoon salt

One cup of shredded unsweetened coconut

1/2 cup raw unsalted pepitas (see Tip)

1/2 cup unsalted sunflower seeds

1/4 cup chia seeds

1/4 cup hemp seeds


Set oven to 325 degrees Fahrenheit. The parchment paper should be used to line an 8-inch square pan, with additional paper hanging over both edges. Spray cooking spray on the pan sides and parchment paper.

Over medium heat, combine tahini and honey in a small saucepan. About 2 minutes, while stirring, until just combined and warmed. Add vanilla and salt after removing from the heat.

In a big bowl, mix hemp, coconut, pepitas, sunflower seeds, chia seeds, and sunflower seeds. Add the tahini mixture and whisk to coat thoroughly. In the prepared pan, press the ingredients firmly.

Bake for 30 to 35 minutes, or until brown. On a wire rack, let the pan to cool fully. Lift out the uncut squares using the parchment that hangs over them. Slice into 25 squares and arrange on a cutting board.
