Veggie & Hummus Sandwich

The ideal vegetarian meal on the go is this mile-high sandwich with hummus and vegetables. Depending on your mood, mix it up with various hummus flavors and vegetables of various kinds.


4 slices whole-grain bread

6 tablespoons hummus

1/2 avocado, mashed

1 cup mixed salad greens

1/2 medium red bell pepper, sliced

1/2 cup sliced cucumber

1/2 cup shredded carrot


Spread hummus on one slice of bread and avocado on the other. Add bell pepper, greens, bell pepper, carrot, and cucumber to the sandwich. Cut in half, then present.
