West Coast Avocado Toast

This nutritious vegan lunch idea tops sprouted whole-wheat bread with hummus, sprouts, and avocado. In the freezer department of your local grocery store, look for sprouted bread.


One cup mixed salad greens

One teaspoon red-wine vinegar

One teaspoon extra-virgin olive oil

One Pinch of salt

One Pinch of pepper

Two slices sprouted whole-wheat bread, toasted

1/4 cup plain hummus

1/4 cup alfalfa sprouts

1/4 avocado, sliced

Two teaspoons unsalted sunflower seeds


In a medium bowl, combine greens with vinegar, oil, salt, and pepper. Each piece of bread is spread with two tablespoons of hummus. Sprinkle sunflower seeds on top and add avocado, sprouts, and greens.
