Zucchini & Mushroom Sauté

Serve these straightforward turkey burgers with this side dish. Oregano and thyme are two other fresh herbs that work nicely.


Extra virgin olive oil, two tablespoons

two tiny julienned zucchini

1-1/2 cups of sliced mushrooms

Two teaspoons of freshly chopped basil

To taste, add salt and freshly ground pepper.


A big nonstick skillet with high heat is used to heat the oil. For two minutes while stirring, add the zucchini. Cook, tossing, the basil and mushrooms for about a minute or until they are tender. Add salt and pepper to taste.
